Broccoli Pesto Pasta

Ingredients:

  • 1 head of broccoli, chopped
  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 lb pasta (penne or spaghetti)
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Steam the broccoli until tender, about 5-7 minutes. Drain and set aside.
  3. In a food processor, combine the broccoli, basil, pine nuts, garlic, and Parmesan. Pulse until smooth.
  4. With the food processor running, slowly add olive oil until the pesto reaches a smooth, creamy consistency.
  5. Toss the pasta with the pesto sauce until evenly coated. Season with salt and pepper to taste.
  6. Serve immediately, garnished with extra Parmesan if desired.
