Broccoli and Shrimp Scampi

Broccoli and Shrimp Scampi

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 4 cloves garlic, minced
  • 1/2 cup white wine (or chicken broth)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • 1 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped for garnish
  • 1 lb pasta (linguine or spaghetti)

Instructions:

  1. Cook pasta according to package directions, drain, and set aside.
  2. In a large pan, heat olive oil and butter over medium heat. Add garlic and cook for 1 minute until fragrant.
  3. Add shrimp to the pan and cook for 2-3 minutes on each side, until pink and cooked through. Remove shrimp and set aside.
  4. In the same pan, add white wine (or chicken broth) and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.
  5. Add broccoli florets and cook for another 3-4 minutes until tender, adding salt, pepper, and red pepper flakes to taste.
  6. Return shrimp to the pan, then toss in the cooked pasta and Parmesan cheese. Stir everything together until well combined.
  7. Serve hot, garnished with fresh parsley and more Parmesan cheese if desired.
